Jerked Leg of Goat

This recipe is inspired by Emeril. I remember watching his show as a child and am thrilled to be passing along his goat recipes as a garmer today! Despite the long ingredient list, most of it wil be found in your pantry. This recipe is spicy, it's unique and it'll be a favorite around any dinner table. Bam!
1 leg of goat
1 onion, chopped
4 garlic cloves, crushed
2 hot peppers
2 Tbsp minced ginger
2 Tbsp brown sugar
4 tsp allspice
2 tsp fresh oregano
1 tsp salt
1 tsp pepper
¾ tsp cayenne
½ tsp cinnamon
½ tsp nutmeg
¼ c olive oil
2 Tbsp dark rum
2 Tbsp fresh lime juice


Place goat leg in a large, sealable bag.

In a blender or food processor, mix remaining ingredients in a smooth paste. Pour over meat and shake to coat evenly. Place in refrigerator for at least 6 hours or overnight.

Remove goat from bag and place in roasting pan, allowing meat to come to room temperature before cooking. Roast at 375 F for 1 hour, 15 minutes, turning once. Meat should reach 145 F.

Rest for 10 minutes on counter and serve.
