Simple Roast Chicken

Never roasted a chicken before? Or want a simple way to highlight the flavor of a farm raised chicken? This recipe is quick, easy and produces moist meat with crispy skin. Perfect with roasted potatoes and a green salad.

1 chicken
1 lemon, halved
1 head garlic
2 Tbsp butter
Salt and pepper


Rinse chicken inside and out and pat dry. Cut garlic head in half crosswise. Place both garlic and both lemon halves inside chicken.

Rub butter on outside of the chicken. Sprinkle with salt and pepper.

Place in roasting pan and cook at 425 F for 1 hour and 15 minutes, or until juice runs clear when the thigh is pricked with a fork. Internal temperature should reach 165 F.

Let rest for 10 minutes on counter. Cut and serve. Save bones for chicken broth.
